Formerly Ceylon, this little island situated at the southern most tip of the Indian sub-continent, has a wonderfully varied cuisine, reflecting not only the traditions of the indigenous people, but also the different nations who made their home in Ceylon, or came to trade. There are many flavours that arrived with these settlers, who were the Portuguese, Dutch and British, with added influence from the early Arab spice traders.
